Opeth have a something of a classical feel to some of their music.

well, im not sure if it fits 100% but have you tried avantasia? they're a joint project initiated by tobias sammet, just try youtube :) i really really love them

Heard of Dream Theater? Opeth also has a CD called 'Damnation' that is all acoustic.

Also! I just remembered. Saw this band a while back they're called Herra Terra. They have a myspace, probably a few other sites too. Kinda what you're looking for. They have a Deftones feel.

Linkin Park is NOT metal. They are a great band and I am a big fan but that doesn't make them a metal band.
